I'm 5'11" but I have long legs. I got a pair of shift riding jeans now. Shift only offered sizing for the waist, so obviously I got a 32. Length wise, the pants are fine off the bike. When I am on the bike, the pant legs ride up and expose my boots and socks. Not a big fan of that.
Can anyone recommend some denim riding pants, that are quality and built for protection, but won't ride up my ankles while on my XB?

Hey Grego,
I'm roughly your size. You may want to check out CycleGear's "Bilt Iron Workers" denim pants. They have Kevlar (or some other abrasion-resistant material) in the hips and arse areas, as well has knee armor. They're not exactly race protection worthy, but they're the best casual riding pants I've worn that offer better protection than regular pants and look normal enough to be worn out without looking like obvious "motorcycle pants".
They also have a cargo pants version too.

Diamond Gusset jeans are available in 36" length and are made in America. www.gusset.com Been using them for a few years, haven't had crash tested them yet but they are kevlar lined, the defender jean.

There not riding pants but my lucky brand jeans have saved me once before.
