08 1125r and the gas light has been on since i bought it, ran through a few tanks of gas so far and havent run out of fuel while riding...yet.
is it a simple sensor change or what?

Check www.buelmods.com for a service manual.
I'm not extremely familiar with the 1125r but if the fuel pump is anything like the XB it should not be difficult to fix.
Hardest part on the XB is pulling the pump out of the frame.
Start doing some google searching and hopefully you'll find an old thread that helps you out.

any reccommendations on what brand / model fuel pump to use?
ive seen a few choices on ebay some of which seem to fit multiple other brand bikes not just the buells , which would lead me to believe they are just a universal style pump that theoretically could work with the 1125 and also wouldnt help with my fuel guage/sensor issue

Your fuel pump and the low fuel sensor are 2 different things.
Remove the fuel pump assembly, and its the little gold hat looking thing on top. Check all those wires very closely, they are known to rub through and cause your issue.
