Is the axl 7/8 inch?

Have a new set of Pilot Power 2CT's and I have the bike up in the air to remeove the wheels......only to find out I don't have the correct tools to remove the axls. What size is the hex head? Looks like maybe 7/8 inch?

Yep, the piece in the tool kit that looks like a double nut, used to remove the rear axle, takes a 7/8" wrench.

While asking questions it is possible to take the rim off while using a rear tire stand correct?...
