Okay, I'm primarily confused between the ReJet and the Air Screw.

Is rejetting actually getting a new main jet for the carb? Air screw is totally separate correct?

If this is the case, then I can adjust the air mixture at any point correct? One doesn't have to be before the other?

Rejetting will probably have all new jets and an adjustable needle too. The pilot screw is just for tuning the low speed circuit. Yes you can adjust it at any poit make sure you know how many turns out it is at stock for a reference point.

ok the spacer gets rid of the bog off throttle up.
the mixture screw only adjust idle to 2k mixture.
main jet everthing above 2k
most those gaskets hold together pretty good i would just order the one main jet and search up the right spacer/washer
