Has anybody tried/done any kind of sanding or burnishing on their plastics to achieve a smooth matte/satin kind of finish? I notice how easily the buell plastics scuff and I'm thinking a ducati style finish would look really great on a buell, but I'm not sure how to approach this.

you would have to paint them to get the same look as the new ducati's. if you scuff them they will not look good. their paints are a matte finish.
