I just bought a 2001 Buell x1 lightning, with 21,000 miles after Riding it 50 miles the oil light came on. Checked the oil level which is fine what else should I check.

The oil light isn't for the amount of oil you have. It's for the oil pressure you (don't) have[sad]

I know it's for oil pressure but thought if it was low it could effect the oil pressure.

it can but it has to be more than 1 quart low on average.
do this:
1-check level and top off if required
2-if dirty or appearing contaminated change oil and filter and use proper viscosity
3-check small contact wire on oil pressure switch. broken or loose or dirty? repair
4- light still on? replace pressure switch. they're cheap and standard sportster part for your application
5-light still on? check pump and it's driver gear as well as driven gear.
