payment and shipping

What is the safest way to accept payment and shipping these days? I have never had issues with PayPal but can't they claim it was shipped to the wrong address and get a refund and the product? Not saying that is what this person has intent of doing was just wondering.
I have a potential buyer that woukd have to ship.

And if it's shipping a bike, I'd rather have them come get it, meet 1/2 way or deliver for a fee myself. Cash only, but that's just me.

I buy all the time using paypal.
Verify person is real (call/text email, make sure the terms are written down correctly.
verify the payment is sent family/gift (can't take it back) or paid in cash by shipper.

It's probably more dangerous for the buyer than the seller. long as you get paid at least.
