sheet metal work + paint ?'s

Hey there's got to be some body work guys on here so I got some ?s
I'm ass to neck deep in 'restoring' my 95 ram. Many say not worth it but iv done way too much work on it to let some rust kill it.
Aaaaany way, iv got it tore down to away to many pieces and have all the patch panels welded in and am starting the longggg task of sanding through what I find out is 3 paints and much bondo.

My questions is what is going to be my most likely mistake?
I have painted a few things so I have that somewhat down. Except how thin to thin the paint

Any tips or does and DO NOTS would be greatly appreciated
