Signs and Symptoms of a bad head temp sensor

What would be some tell tale signs if your engine head temp sensor was going bad or the wire was frayed? Check engine light?
 
I had an oil leak fixed and they forgot to hook the sensor back up. There was no check engine light. What I noticed right away was that it didn't start very well and seemed to run a little weird(chalked it up to the new ecm flash). Then as I rolled on the throttle getting on the interstate, it felt like a turd and died. I looked down at the gauges and saw that it was rumbling around 500 rpm before it shutoff completely. Throttle did nothing. On the side of the road, it would start for a second and die. Did that twice. Called them to come get me.
 
If I remember correctly, i had to hold the thorttle open to start it, and it wouldnt stay running by itself, but the easiest way I could verify it was to watch the temp guage on ecm spy. The temp would fluctuate up and down looked like a tachometer kinda. Hope that helps. Sorry its been a while since it happen and cant remember for sure the symptoms
