You guys really should consider track riding. I don't where you are in Wisconsin, but there's a few good options around the area for track riding and none of them require you to be particularly fast. My wife and I attend an advanced riding school just south of St. Paul, and the whole school is all 'ride your own pace'. They have six levels to fit any riders' skill level and chosen pace. We live in WI, and the track they use is about a half hour from the state line if you cross over on 94. The same organization runs several track days at both Road America and Brainard International Raceway every season, and they do multiple levels to suit riders' skill levels. A weekend or two per summer at a well organized track day can easily replace an entire summer's worth of street riding in terms of enjoyment on the bike. It also happens to be a great way for a couple to get away for the occasional weekend. My wife and I have really bonded over our time on the track.
Check out ZARS if you're interested at all, the fees are reasonable and they put on a top notch track day full of learning and fun.
